This Wednesday, March 2, marks what would have been the 107th birthday of Theodor Seuss Geisel, or as you may know him, Dr. Seuss.

Dr. Seuss has become something of a children’s book icon, publishing 44 books, which were often characterized by imaginative characters and delightful rhyming schemes. His most celebrated books include the bestselling “Green Eggs and Ham”, “The Cat in the Hat”, “One Fish Two Fish Red Fish Blue Fish”, “Horton Hears a Who!”, and “How the Grinch Stole Christmas“.

Numerous adaptations of his work have been created, including 11 TV specials, three feature films, and even a Broadway musical.

It seems like everyone gets into the spirit on Dr. Seuss’ birthday, even Google.  You can head over to Seussville for all sorts of printable activities and online games.

Of course, we recommend you and your kids sit down to a tasty meal of Green Eggs and Ham!  Here’s the secret recipe…

Green Eggs & Ham Recipe

6 large eggs
1 tsp. canola oil
2 slices deli ham, chopped
A handful of fresh spinach, chopped
1 tbsp. light mayonnaise
2 tbsp. grated Parmesan cheese
Salt and pepper to taste

Place the eggs in a medium saucepan. Cover with water and bring to a boil. Cover, remove from heat and let stand 15 minutes. Drain and rinse with cold water until cool. Peel and slice in half lengthwise. Remove yolks and set 3 aside for another use, or feed them to your dog.

Meanwhile, heat the oil in a saucepan set over medium heat and sauté the ham for a minute. Add the spinach and cook for another minute, until wilted.

In a medium bowl mash the 3 yolks with the mayonnaise, Parmesan cheese, salt and pepper until smooth. Add the spinach mixture and stir until well blended.

Stuff egg white halves with filling and serve immediately. Makes 12.

Yummy!  I will eat them on a train, I will eat them in the rain.  I DO like them, Sam I am!  I DO like Green Eggs and Ham!
